Veg Chili

Serves: 2 (big portions)

Ingredients:
1 14oz can of Black Beans, drained
1 10oz can of diced Fire Roasted Tomatoes
1 Jalapeno, diced
1/2 to 3/4 Yellow Onion, diced
1/3 Yellow Bell Pepper, diced
1/3 Orange Bell Pepper, diced
1/3 Red Bell Pepper, diced
1/3 Green Bell Pepper, Diced
2-3 cloves of Garlic
Salt
Black Pepper
Cumin, ground
Oregano
Red Chili powder or paprika
Small cup frozen corn
Shredded cheese (Cheddar, preferably)

Method:
Cook onions, then garlic, then add all peppers and jalpeno to soften (with salt). On softening, add black pepper, cumin and oregano. Next add the tomatoes. Simmer for a bit and add beans. Simmer on low heat for 20 minutes

Serve:
1. Warm chili with diced avocado, warmed corn kernels and shredded cheese garnish
2. Grilled Corn Bread on the side
