The life and times of The SK Mess

About The SK Mess
The K stands for Kitchen. SK, coined with the fondest memories of my Alma Mater beat out FK (for Freespirit's Kitchen), despite its inherent pun.

Preface - first published July 3, 2011
In October 2009, I discovered the joys of spinning and my ability to do 100 squats in one go, given the right music. At the end of every successfully completed hour at the gym when I checked the calories burned, I began to appreciate a lot more what I put into my mouth. I didn't have set calorie or nutrient goals for the day but with a lot of assistance from a lot of people, not least my ma, I developed a thoroughly formidable, definitely enviable diet.

During the summer of 2010, the diet was lost in excessive bread breaking undertaken as all and sundry shared (!?) my joy of admittance into business school. This loss notwithstanding, I still huffed and puffed (pun intended) my way up to Machu Picchu with an exaggerated amount of bread and cheese in my diet for 7 days. I continued to enjoy the bread and cheese (this time with tomato sauce and two toppings for just $5.99) but without all the mountain climbing.

By January 2011, the bread and cheese had accumulated in sufficient quantity to command a presence of its own. However, with the travesty that is a Chicago winter and a convenient excuse for perpetual binging, the diet continued to be pushed further away.

So after one year of business school and imbibing dietary influences from the USA, I am back at 2009 fitness levels. Yesterday, when I could no longer push myself to hit the 500 calorie mark in spinning class, I decided to look up my old friend and ask her to stay a while. This time around, the diet will be harder to stick to because my mom isn't around, I have no trainer and my cooking skills are embarrassingly limited. But I am nothing, if not determined.

SK Mess has been created to serve one too many purposes. Primarily, it is to make me chuckle at the very clever choice of the blog title. Additionally, the blog is to document my cooking pursuits - my attempts at eating healthy, home-cooked meals, managing my calorie and nutrient intake and constantly reminding myself that it is never too late to call mom or dad with a question about the right amount of water to add to lentils.

Starting this sunny Sunday in July, you will see no more of this:

...but a whole lot more of this:

..or this if you are an Obama fan:

Till next time everyone!

SK Extra (No coupon book needed!! ): Check out the MyPlate app from livestrong.com (http://www.livestrong.com/myplate/) Sweet tool to keep track of calorie consumption through the day. I prefer it to the Calorie Counter version because of the "Verified" stamp against certain information.

Update as of October 29, 2016:
It is with a heavy heart that I shut down The SK Mess. The kitchen did not pass the strict inspection of the NYC Health Department. It will continue to appear as a tag on this blog though.
